Our winemaking process is carefully managed to preserve the character and integrity of our fruit. We begin by handpicking the grapes to ensure only the best quality fruit is selected. This approach allows us to maintain optimal freshness and minimise damage during harvest.
After harvesting, the grapes are basket pressed. This traditional technique gently extracts juice and flavour while retaining the structure of the wine, resulting in a finished product with depth and complexity.
The wine is then matured in a combination of French and American oak barrels for a period of 12 to 18 months. The use of both French and American oak imparts a balanced array of flavours and aromas, enhancing the overall profile of the wine. Once the ageing process is complete, the wine is racked and bottled, ready to be enjoyed.

In preparation for planting, a comprehensive program of deep ripping and soil nutrition was undertaken to ensure optimal conditions for vine growth. The vineyard was subsequently established in two stages, in 2012 and 2014. During these foundation years, guidance and expertise were provided by viticulturist Tim Brown, with a strong focus placed on building the structure and development of the vines.
This careful attention to vine health and formative practices is now yielding results, as the vines consistently produce high-quality fruit. The success of this approach is attributed to a rigorous regime of pruning and shoot thinning, which is implemented to maintain low yields and further enhance fruit quality.
Our east facing vineyard comprises 3 acres of Shiraz from 2 distinctively different clones, an old Tahbilk and old Barossa clone which each provides its own distinct character to our wine. The old Tahbilk clone is more fruit driven with vibrant colour whilst the old Barossa clone provides structure and depth.
On the steeper slopes of our southerly vineyard, we have planted Grenache, Mourvèdre and Cinsault, continuing our southern Rhône theme. By utilising a combination of close planting and bush vine techniques, we have created a varied growing environment that encourages diversity and complexity in the fruit produced. This approach enables us to capture the unique characteristics of each variety, further enhancing the distinctive profile of our wines.
